What Makes Unroasted, Shade-Grown Mate Different

Yerba mate exists on a spectrum from heavily roasted and smoky to green and grassy, depending on how it is processed. Unroasted mate, sometimes called "green mate," is closer in character to a green tea: vegetal, fresh, and full-flavored, with more of its natural antioxidants and chlorophyll intact than its roasted counterparts. Shade-growing slows the plant's development, concentrating its flavor compounds and producing a leaf with a richer, more complex taste profile. Traditionally cut rather than powdered, this loose-leaf format brews cleanly and can be re-steeped multiple times.

What Yerba Mate Contains

  • Caffeine, theobromine, and theophylline: Yerba mate contains three xanthines, caffeine as the primary stimulant, along with theobromine and theophylline, the same compounds found in tea and cacao. Together they produce a stimulating effect that many people describe as more focused and less jittery than coffee alone
  • Polyphenols and antioxidants: Yerba mate contains polyphenols believed to act as antioxidants, as well as flavonoids including rutin and quercetin, anthocyanins, triterpene saponins, phytosterols, amino acids, minerals, and vitamins

How to Brew

Use 1 tablespoon per 10 ounces of water heated to 150 to 170°F (not boiling, which can make mate bitter). Steep for 3 to 5 minutes. The leaves can be re-steeped several times. Traditionally enjoyed in a gourd with a bombilla straw, or brewed in a French press.
